Pedemontis directly cultivates 13 hectares of vineyards, immersed in the forests of Roero: a land with ancient viticulture and endowed with exceptional biodiversity. The typical sandy soil gives it wines of particular elegance and finesse, rich in aromas. Local and traditional varieties are cultivated: Barbera and Nebbiolo for the reds. Arneis and Favorita for the whites. The vineyards spread out on the left bank of the Tanaro river, in the valleys of Magliano Alfieri and Castellinaldo, Priocca and Govone. The most suitable and planted areas in Roero, characterized by steep and often steep slopes cut by rivers and small streams.
Barbera. Old Piedmont variety cultivated in the region since 1600 originating from Asti. Vineyard: Located in the Alba region. The area is 1 ha, at an altitude of 270 m. Limestone soil with a depth of only 1.30 m. The harvest takes place at the end of September and the beginning of October. The fruit is collected by hand. After the harvest, extraction takes place with low pressures and fermentation in stainless steel tanks with indigenous yeasts. Alcoholic fermentation for 4 weeks, in small tanks with controlled temperatures. This is followed by malolactic fermentation for 2 weeks and aging in oak barrels for 9 months.
