Historically, the Favorita variety is derived from Vermentino. It is said to have originated in Spain, crossed France and then reached Sardinia, finally ending up in Liguria and Piedmont, specifically in the Roero region.
Today, Favorita is an elegant, expressive "niche" (limited production) wine with good aromatic persistence.
VINEYARD
It is located on an area of 0.42 hectares, at an altitude of 270 meters above sea level, with good southeast exposure.
Average age of vines: 12 years.
HARVEST
The harvest is done by hand in small crates, during the coolest hours of the day.
WINE MAKING
Destemming (removal of the stalks) and transport to the press, where the must is gently pressed.
AGING / MATURATION
For 3 weeks in stainless steel tanks at controlled temperature. Then, the wine remains on the lees for 5 months in stainless steel tanks. At the end of fermentation, periodic battonage (stirring of the lees) is carried out. After remaining in the steel, it rests in the bottle for at least 30 days.
ORGANOPERATIVE CHARACTERISTICS
Color: Straw yellow with green highlights.
Aroma: Intense and fruity bouquet with notes of white flowers and apple (Rene variety).
In the mouth: Fresh and dry.
COMBINATIONS
It is recommended to be served chilled (8-10° C). It is ideal as an aperitif. It goes well with fish appetizers, shellfish, Russian salad and light fish-based first courses. Excellent with sushi.
