The Recipe
The Ingredients We Will Need (For 40 Pops):
For the vanilla-flavored cake:
▪ 1 and 2/3 cups (200 gr.) all-purpose flour (sifted)
▪ 1/2 teaspoon baking powder
▪ 1/4 teaspoon baking soda
▪ 1/2 teaspoon salt
▪ 1/2 cup (115 gr.) unsalted butter, at room temperature
▪ 1 cup (200 gr.) granulated sugar
▪ 1 large egg, at room temperature
▪ 2 teaspoons vanilla extract
▪ 1 cup (240 ml) whole milk
For the vanilla buttercream:
▪ 100 g unsalted butter, at room temperature
▪ 1 and 3/4 cups (210 g) icing sugar
▪ 2–3 tablespoons heavy cream or whole milk
▪ 1 teaspoon vanilla extract
For the Topping/Setting:
▪ 670gr Couverture or Candy Melts of your choice
▪ Sprinkles/Кас-Кас - Truffles
▪ Cake Pop Sticks
Instructions:
1. Preheat oven to 180°C. Grease and flour a 23 cm baking pan.
For the Cake:
1. In a bowl, mix the flour, baking powder, baking soda and salt. Set aside.
2. In another bowl, using a hand or stand mixer with the whisk attachment, beat the butter and sugar until fluffy, about 2 minutes.
3. Add the egg and vanilla and beat on high speed until well combined. Scrape down the sides of the bowl with a spatula if necessary.
4. Add the dry ingredients and milk to the butter mixture and beat on low speed until combined. Give the thick mixture a quick stir with a spatula to make sure there are no large lumps.
5. Pour the mixture into the prepared pan and smooth the surface. Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover with aluminum foil.
6. Let the cake cool completely in the pan on a wire rack.
For the buttercream:
1. In a bowl, using a hand mixer or stand mixer fitted with the whisk attachment, beat the butter on medium speed until creamy, about 2 minutes.
2. Add the powdered sugar, heavy cream and vanilla and beat on low speed until combined. Increase to high speed and beat for 3 minutes.
Insert the cake pops:
1. Crumble the cooled cake into the bowl with the buttercream. Make sure there are no large lumps. Beat on low speed until well combined.
2. Take 1 tablespoon (about 20 g) of the cake/buttercream mixture and shape into a ball. Place the balls on a baking sheet lined with parchment paper. Refrigerate for 2 hours or freeze for 1 hour until the shape is firm. If necessary, reshape the balls after refrigeration to make them smoother. Keep the baking sheet in the refrigerator, working with a few balls at a time.
For the coating:
1. Melt the couverture or candy melts in a bowl in the microwave in 20-second intervals, stirring each time, until melted and smooth. Alternatively, you can use a double boiler.
2. Remove only 2–3 cake pops from the refrigerator at a time. Dip one end of the sticks 1.5 cm. into the coating and then insert the chocolate tip into the center of the cake pop (about halfway). Dip the pop into the coating until it is completely covered. Make sure the coating covers the base of the pop where the stick goes. Very gently tap the stick on the edge of the container to remove any excess material. 3. Decorate with truffles, sprinkles or sprinkles and place the pops upright on a styrofoam stand or box. Repeat for the remaining pops, working a few at a time. The pops must be very cold before dipping.
Storage:
1. The coating solidifies within 1 hour. Store the cake pops in the refrigerator for up to 1 week.
Tips:
1. We usually make the cake 1 day in advance. We cover it and keep it at room temperature. We can store the cake balls that have not been dipped in the coating in the refrigerator for up to 2 days or freeze them for up to 6 weeks. Let them thaw in the refrigerator before using them. We can also freeze the finished cake pops for up to 6 weeks after the coating has completely solidified.
2. Colored candy melts: If we want different colors, we can add confectionery coloring to white candy melts for a more playful effect.
