The Recipe
Ingredients We Will Need (For About 10 Cookies):
For the cookies:
・120 g unsalted butter
・60 g icing sugar
・1 egg yolk
・1/4 teaspoon salt
・1/2 teaspoon vanilla extract
・Juice from 1/4 lemon
・50 g almond flour
・150 g all-purpose flour + extra for dusting

Implementation
1. For the dough: place the butter in a bowl (preferably using a mixer, otherwise mix by hand). Beat until creamy, gradually adding the icing sugar. Add the egg yolk, then the salt, vanilla and lemon juice. Mix until all the ingredients are combined.
2. If using a mixer, remove the whisk, attach the dough hook, and reduce speed. Add the almond flour and sifted all-purpose flour. Mix until a dough forms.
3. Wrap the dough in cling film and place it in the refrigerator for 1 hour.
4. Preheat the oven to 180°C. Line a baking sheet with parchment paper.
5. Remove the dough from the refrigerator and roll it out to a thickness of about 0.5 cm on a lightly floured surface. Cut out the cookies with a cookie cutter of your choice. Use a smaller cookie cutter to cut out the center of the cookies. Place them on the baking sheet. 6. Bake in the oven for 8 minutes, until they look dry. Let them cool completely on a rack.
7. Sprinkle the cookies with the cut-out centers with powdered sugar. Spread Biscoff Spread over the entire cookies. Place a cookie with the center on top, pressing lightly.
