ALMONDS
Almonds are the most nutrient-dense type of nuts. One serving (about 20 almonds, which is about 2 handfuls) is an excellent source of vitamin E and magnesium, a good source of protein and fiber, potassium, phosphorus, iron, monounsaturated and polyunsaturated fatty acids, and low in saturated fat and cholesterol. They are also a very good source of calcium: a cup of almonds gives us as much calcium as a small piece of feta cheese!
Almonds are a good source of:
•vegetable fiber
•protein
•calcium
•iron
•vitamin E and folate
•monounsaturated and polyunsaturated fatty acids (omega-6 and omega-3 fatty acids in smaller amounts)
•flavonoids (in the peel)
•phytosterols.
How to make almond milk:
Use a cup of raw almonds, which you put in a tupperware and fill with water. Change the water every 8 hours. When 24 hours have passed, discard the water, clean the soaked almonds from their skin and beat the white almond in the blender with a little water. Finally, strain through a sieve and you have a healthy almond milk drink.
