MILLET
Millet is a type of cereal, it was known to the ancient Greeks, who cultivated it systematically, mainly for making bread.
(Pythagoras recommended it to his students as the ideal food).
There are references in the Bible to the use of millet in a type of unleavened bread
Millet is a good source of vegetable protein, it is rich in B vitamins, especially niacin, folic acid and B6.
It contains iron, calcium, potassium, magnesium, copper and zinc.
It does not contain gluten, so it can replace wheat in the diet of people who suffer from celiac disease or other forms of wheat allergy
Magnesium protects the heart by reducing the risk of heart attack, lowers high blood pressure and reduces the frequency of migraine attacks.

Lignans, which are abundant in millet, are converted by beneficial intestinal bacteria into substances that also act as a protector for the heart and at the same time reduce the likelihood of various hormone-dependent types of cancer, especially breast cancer.
Millet is high in phosphorus, an inorganic element that performs a multitude of functions in the body.
Millet has the property of increasing serotonin levels in the body and in this way calms the body and improves mood.
Millet is one of the favorite foods of vegetarians, because with its fiber it creates a feeling of fullness in the stomach, while at the same time supplying the body with good quality protein
Due to the magnesium contained in millet, it is suitable for athletes who train intensively, e.g. cyclists, long-distance runners who often experience leg cramps.
USE:
For each cup of millet, add 2 cups of water and a tablespoon of olive oil, the time it takes to boil is about 20'.
In the meantime, finely chop a carrot, half an onion and two cloves of garlic. Once the millet is ready, remove it from the heat and add the vegetables.
When millet is combined with legumes and raw nuts, it provides protein equivalent to that of meat.
Millet can be a very good breakfast meal, if we add honey, cinnamon, nuts, raisins and our favorite fruit cut into small pieces.
