It is a component of the mineral soda and is found dissolved in many mineral sources. It is among the codified food additives by the European Union, identified as E 500. It has many related names such as baking soda, bread soda, cooking soda and bicarbonate of soda.
Sodium bicarbonate, referred to as "baking soda", is used mainly in baking, as a leavening agent. It reacts with acidic ingredients  such as cream of tartar (potassium hydrogen tartrate), lemon juice, yogurt, buttermilk, cocoa, vinegar in porridges, releasing carbon dioxide, which causes the porridge to expand and forms the characteristic texture and grains in pancakes, cakes, quick breads. Sodium bicarbonate mixed with water can be used as an antacid to treat acid indigestion and heartburn. Sodium bicarbonate is also used as an ingredient in some mouthwashes.
