Whole wheat DINKEL: the nutritious wheat
Dinkel is a variety of wheat that is distinguished by its high nutritional value. Dinkel has a high solubility in water and thus the nutrients are easily absorbed by the body.
It comes from the same genus as common wheat. It is a variety of wheat with 21 chromosomes (compared to 42 of common wheat) and several distinctive physical & nutritional characteristics, which differentiate it from common wheat. It is also an excellent source of fiber and has large amounts of complex vitamins. The total protein content is 10 to 25% higher than common wheat varieties. It has gluten, but of a different composition than common wheat, however, people with gluten intolerance should avoid it.
