It is white dinkel flour, the nutritious wheat. It is ideal in confectionery for the creation of baked goods and sweets. Dinkel is a variety of wheat that is distinguished by its high nutritional value. Dinkel has a high solubility in water and thus the nutrients are easily absorbed by the body. It comes from the same genus as common wheat. Dinkel flour type 1050 gets its typical color due to the higher content of the shell and the nutrients of the seed. This flour is particularly suitable for healthy, dark breads (German-style breads) and is an excellent substitute for wheat flour in classic recipes. It has gluten, but of a different composition than common wheat, however, people with gluten intolerance should avoid it.
