The ancient emmer wheat seed with a history of 10,000 years is also referred to as Zea! Furthermore, it is characterized by an “al dente” texture and a fruity taste, it is filling and easy to digest. Research has shown that Zea contains 40% more magnesium than other cereals. The high percentages of the amino acid lysine are what make pasta produced from Zea particularly easy to digest. A bread based on emmer wheat can be included in our daily meals if we combine it with honey or tahini for breakfast or include it in any other meal of the day as it will give us the maximum nutritional value we need.
