The
semolina produced by grinding durum wheat is
yellow in color, due to the presence of natural pigments (carotenoids).
It is used for the production of low-moisture, i.e. dry
products, e.g. pasta, couscous. Couscous is prepared by
mixing semolina and yellow durum wheat flour, in a ratio of
2 to 1. When the semolina is light yellow in color, then it has been
used, in addition to durum wheat and soft wheat. A well-known
dessert prepared with semolina is halva to which
we add butter and almonds.
In the bakery and confectionery market, two types of semolina are used, fine and coarse. Each form is intended for different preparations, e.g. fine for creams, coarse for halva. Fine semolina is used for the preparation of products such as ravani, creams, milk pudding, homemade pasta, honey macaroni, and semolina bread. Semolina coarse is used
for the preparation of halva, walnut pie, samali, trahana and ravani.
May contain traces of other cereals containing gluten, celery, soy, mustard, sesame, milk, eggs, peanuts, nuts and products thereof.
Store in a dry and cool place away from insects and odors.
