Buckwheat or emmer is a seed of a low shrub native to Asia and widespread in Europe. Buckwheat does not contain gluten and is rich in protein, B vitamins, vitamins E and K, folic acid, minerals such as calcium, iron, magnesium, manganese, phosphorus, potassium, selenium and zinc.  It has a beneficial effect on reducing cholesterol and stabilizing blood sugar levels thanks to the soluble fiber it contains.  It gives energy to the body and can contribute to the proper functioning of the circulatory system. It replaces potatoes and rice daily, while it is combined with peas and beans. It can also be added to salads, soups and boiled foods.
