Trachanas is a traditional Greek type of pasta made from flour and milk and has a grainy and irregular shape. The grains are approximately 2-3 millimeters in diameter. It comes in various varieties: sour and sweet, thick and thin. Sour trachanas is fermented with yogurt.
It has high nutritional value, few calories and low fat.  Our country claims the title of the country with the largest variety of types of trachanas and dishes based on it. We can cook it as a soup either with enough water, or thicker. The cooking time of trachanas is usually short, about 15-20 minutes. Sometimes it is also cooked with tomato. When preparing trahanas, the last stage is its drying. To do this, the trahanas is spread out so that it has the maximum possible surface area. This process, the spreading of the trahana, has also remained as a popular expression, referring to someone who is characteristically slow-moving.
