Nutritionaly, chickpea flour has the same advantages as chickpeas and is superior to wheat flour in a whole series of elements: high fiber content, high protein content, high amounts of folic acid, potassium, calcium and phosphorus, minimal gluten and a large amount of polyphenols, i.e. important antioxidants. The main difference between chickpea flour and flour in its use for breads or sweets, cookies, cakes, etc., is that it does not rise, since it contains very little gluten - and it is the gluten that causes breads and sweets to rise. Furthermore, chickpea flour has a high fiber content and absorbs much more liquid than other flours. For this reason, we increase the volume of liquids in a recipe when using chickpea flour.
