Whole wheat flour is a coarse flour that contains the bran, germ, and endosperm. The presence of the bran reduces gluten production and results in products made from whole wheat flour tending to be heavier and coarser than those made from white flour. Whole wheat flour is rich in B vitamins, vitamin E, and protein, and contains more trace elements and fiber than white flour. In most recipes, wholemeal flour is mixed in equal quantities with white flour, to produce a wide range of crusty breads, for loaves, pita and many more.
