This flour, made from durum wheat, is strong and rich in gluten, has a characteristic yellow color and can be finely ground or coarser, depending on the type. It is ideal for making bread (with the addition of sourdough or yeast), since it gives volume and elasticity to the dough, while it is also ideal for making pasta, for rolling out phyllo for pies and for doughs in general, although it is more difficult to roll out. From this, the mixture is made, in a 1:1 ratio with 70% type flour and the well-known village bread, with the characteristic compact structure and crust.
